
It took a long time for me to come around to liking lamb. I had only experienced the meat as braised shanks or ground up in some too-sweet moussaka, and the only word I’d use to describe its aggressive flavor was gamey. Not necessarily a compliment. That was before I discovered the shoulder cut. Here it gets rubbed with earthy turmeric and tons of garlic, cooked medium- rare (not braised to hell), thinly sliced, and served with tons of condiments. And it’s amazing. Not “gamey” or “lamby” or even aggressive, just delicious. It’s kind of a fancy cut of meat, so I wouldn’t recommend you whip this up for a casual Tuesday; that said, this roast does make for supremely delicious, even casual, leftovers. While the “fixings” here are rather specific, feel empowered to serve this however and with whatever you like. This happens to be my fantasy spread, but if you don’t have cabbage or you feel like using just regular pita bread, the lamb will still blow your mind.
